I came across this soup in a free magazine thing that you could pick up at the cashier of the grocery store. I got mine from HEB in Austin....gosh I miss that store!!!! I made this soup on a whim and fell in LOVE with it. Now it's one of my favorite go-to recipe's. It's really comfort food for me. Hope you like it.
2 Cans of Cannellini beans
2 links of Italian sausage
1/2 Red Onion Chopped
2 Garlic cloves minced
4 Cups Baby spinach
32oz Chicken Stock
1 Can chopped tomatoes
Salt & Pepper to taste
You remove the sausage from the casing and brown it. 
Add onions and garlic sautee 2 to 3 mins. Add 2 cans of beans with juice, 
chicken broth and bring to a boil. (I've used canned broth, but homemade is MUCH better...you can really tell the difference, and making chicken broth is so easy) 
Reduce heat to simmer and cook about 30 mins un-covered. I've gotten comfortable with this soup and now I add other things from the fridge, this time I add mushrooms
if I had bacon I add that too, YUM. Wilt in spinach, and continue to simmer (the longer it cooks the better it will be)
I used fresh tomatoes, because I had them on hand......but canned are fine. Add tomatoes before serving (cause you want them to be be chunks and not become tomatoe sauce)
