Recipe of the week

I saw a recipe for chicken and tortellini with a cream sauce which gave me the idea, but I COMPETELY changed the recipe….the only thing I copied was the chicken and the cream sauce. I used meat ravioli and some other random whole wheat pasta I had (some farfalle, macaroni, etc.)

The sauce was mayo, red wine vinegar, and a splash of half and half with dried Italian herbs.

I baked my chicken in Italian dressing with cherry tomato halves and fresh basil leaves.

When the chicken was done I diced it and added it to a mixture of: mushrooms, red onion, garlic, the tomato halves and basil from the chicken and sautéed that for a little bit.

I boiled my pasta and combined all that and then topped with parmesan cheese. The sauce didn’t make very much….so it was real light, not like a heavy alfredo.
