Roasted tomatoes

Roasted tomatoes are yummy and a perfect way to use a pint of cherry or grape tomatoes that are about to go bad. You can also use canned diced tomatoes. Add to small baking dish and cover with olive oil, salt, pepper, garlic and dried basil.
Bake at 425 for about 30 minutesRemove from oven and top with fresh parsley and cheese; any kind you have on hand. I used Parmesan, but mozzarella or blue cheese would be great too. You can eat this as a great side dish, top cooked pasta or pizza with it. OR.........

Top a mixed green salad them.
