Hot Crash Potatoes

The Cast of Characters: New Potatoes (or other small, round potato), Olive Oil, Kosher Salt, Black Pepper, and whatever herb you like. I’m using Rosemary and added crunchy bacon too!

Boil potatoes until fork tender
Drain and move potato to baking dish and roll in olive oil, salt and pepper. Next, grab your potato masher and gently press down on the potato until it slightly mashes…then add a few drizzles of olive oil, add kosher salt, pepper & herbs. Transfer to a very hot oven (450)and cook 20-25 mins
when they are finished cooking, I added the crumbled bacon
These potatoes are crunchy and delicious, and the different herb and toppings are endless. Would be great with sour cream & cheese, or scallions and dry ranch seasoning, etc etc etc. Here is the actual recipe from Pioneer Woman's site
