Baked cheesy onions


Cast of Characters: hot sauce, cipollini onions, milk, butter, flour, garlic, sharp white cheddar cheese
Bring water to boil, and add onions. Let boil 8 minutes.

Drain and let cool a minute or two. Then remove skins.

Layer boiled onions in casserole dish

Grate the sharp white cheddar cheese
In a sauce pan, mix the flower and and butter and make a roux
Then add milk
add the cheese and whisk until it thickens

Pour sauce mixture over the onions
Top with fresh ground pepper & smoked paprika

Top the mixture with crushed Ritz crackers or bread crumbs

Then bake for 30 minutes

Creamy Baked Sweet Onions
Cook 10 mins Bake 30 mins

2 10oz. package cipolline or boiler onions un-peeled
2 T butter
1 ½ cup milk
2-3 T flour
1 ½ shredded sharp white cheddar cheese
1 t hot sauce
¼ t salt
1/8 t ground white pepper
¼ Cup crushed Ritz
1 T melted butter

Preheat to 350. Cook onions in a large saucepan in boiling water to cover 5 to 7 mins. Drain, cool slightly and peel. Place in a lightly greased 8 inch square baking dish. Melt 2 T. butter in a heavy sauce pan over medium heat; whisk in flour until smooth, and cook, whisking constantly, 1 minute. Gradually whisk in milk and cook, whisking constantly, 1 minute or until thickened and bubbly. Add cheese, hot sauce, salt and pepper and whisk 2 minutes or until cheese is melted. Pour mixture over onion in dish. Stir together crushed Ritz and 1 T melted butter, sprinkle over top of casserole. Bake at 350 for 25-30 mins or until bubbly.
NOTE: this is from Thanksgiving and NOT on the new WW plan. But def worth the splurge and delicious!
