Soft Taco Night

Cast of characters: 97% fat free flour tortilla, 1 LB ground turkey meat, 1/2 a white Spanish onion, 1/2 can fat free re-fried beans, 1/2 can diced tomato, shredded lettuce, salt, pepper, garlic, cumin & paprika

Slice onion and saute with garlic & a pinch of salt to draw out the moisture

Once the onions started browning they needed a little moisture, so they wouldn't stick to the pan so I added a few dashed of Worcestershire & hot sauce

the onions all browned and delicious, I removed onions and set aside

then added the turkey meat to the same hot saute pan, I think people are turned off by turkey because of how it looks at first
then I added salt, pepper, a bit of cumin & smoked paprika & continued to brown
Once the turkey is fully cooked, add half the diced tomato to the meat mixture

Then add back in the sauteed onions, let that mixture come together & all the flavors combine on very low heat

while that is combining, put half the re-fried beans in a bowl and microwave until hot (they are already fully cooked)
heat tortilla in microwave for about 15 seconds to soften

spread on a thin layer of the re-fried beans

then add meat mixture

then add shredded lettuce

And there you have it, a very yummy, low fat crowd pleasing dinner!
