Skillet Chicken Dijon

Skillet Chicken Dijon
Cast of Characters:
2 Boneless chicken breast
sliced red onion
3T olive oil
2 Cloves garlic minced
3 T white wine (can be omitted if you don't have)
3 T Soy sauce
2 T dijon mustard

I use those frozen boneless, skinless chicken breasts. Thawed in water

Heat oil in skillet

add onions to hot oil and saute until caramelized, then remove from skillet
while onions saute dice chicken breast into large chunks
more olive oil if needed and add minced garlic

Then add diced chicken to garlic & oil mixture
While chicken is browning, in a separate bowl, mix wine, soy sauce, mustard and combine
make sure chicken is browned on all sides
add the onions to the sauteed chicken

Pour sauce over chicken, cover and cook until thickened. Or until you can't wait any longer and have to just eat it!

The sauce will thicken and become silky. I cook about 10-15 mins and then reduce to low & cook until it gets as thick as you want.

Serve this over brown rice or with a side salad for a healthy delicious dinner!
