Mustard Greens

Sauteed greens are a super quick and healthy side dish to accompany any summer meal. All the local farmers markets have such great varieties to choose from: swiss chard, mustard greens, collards, kale, turnip greens, spinach...grab a bunch and try this out.

dice half an onion and saute in olive oil

while onions are softening, chop greens into large piece & add to the onions

the greens will really wilt down, while cooking add garlic, crushed red pepper flakes, kosher salt and cracked black pepper, put a tight fitting lid and let them steam for just a few mins
Right before I serve I add a few dashes of red wine vinegar for a bright acidic flavor, serve with steak, chicken, pork or fish. It's a super healthy, delish side dish!
