Blackened tilapia

I went to Restaurant Depot & got a HUGE box of tilapia...so I'm going to be exploring all the different ways to prepare it. Last night I had it blackened. It was yummy. Here is what I did.

1 ½ T. smoked paprika
½ t. salt
½ T. onion powder
½ t. ground black pepper
½ t. cayenne pepper
½ t. dried ground thyme
½ t. dried oregano
¼ t. garlic powder

In a small bowl combine all spices. Press a heaping tablespoon of the mix onto each fillet so that both sides are liberally coated. Allow the fish to sit for 15 mins at room temp prior to cooking.

Press a heaping tablespoon of the mix onto each fillet so that both sides are liberally coated. Allow the fish to sit for 15 mins at room temp prior to cooking. In a large skillet heat the oil over medium-high heat. Once the oil is almost smoking, add the fillets and cook for 2 to 3 mins on each side

Sprinkle with lemon juice and transfer to fillets to plate.

While the fish cooked I sauteed a shallot with garlic & sliced mushrooms to serve alongside

Here is the finished product with a side of broiled broccoli, it was so easy, healthy & delish
