Turkey Brine

Welcome to turkey brine 2011 edition



Start with a BIG-OLE-POT



Brines are so easy and you can really use any flavors you like. Here is what I used: a carrot cut into a few pieces, an onion cut into quarters, a handful of garlic cloves smashed, a cup of salt, 1/2 cup soy sauce, a cup of brown sugar, a few tablespoons of honey, a few tablespoons of pepper, a few sprigs of rosemary, parsley & thyme, a big pinch of crushed red pepper flakes and 6 quarts of hot water. Stir vigorously so that all the seasoning dissolve into the water. I let it sit for about 2 hours.



here is what it looks like, while it's just chillin out. Once the solution is totally dissolved and it has cooled, add the turkey and hold it down into the solution, so that the cavity fills with liquid, so it doesn't float to the top. Put the lid on and put in fridge for 2-3 days.
