White bean & turkey chili

I took inspiration from Giada's recipe for White Bean & Chicken Chili & made my own version of White Bean & Turkey Chili. See original recipe HERE

Cast of Characters: 2 cans of white beans, 2 lb. ground turkey, onion, 1 can of corn, garlic, spinach, chicken broth, flour, salt, pepper, oregano, chili powder, crushed red pepper & cumin.

You'll need a heavy bottom dutch oven

Dice onion & saute in some olive oil

Add ground turkey to the onions. (I hate that ground turkey looks so gross)

But it looks so good, all browned with the sauteed onions

Seasoning time: salt, pepper, chili powder, oregano, cumin, crushed red pepper and cook until they are all incorporated
add flour to meat mixture and combine (the flour is to thicken the chili)

Add beans (drained & rinsed) and corn to meat mixture

Add box of chicken stock

I also added some beer, just cause I had it....and there is no sense in letting it go to waste! Bring to boil and let simmer.

Once boiling add in spinach and let wilt

This chili was thick, hearty, healthy and definitely YUMMY.
