Broccoli Rice Casserole

Broccoli Rice Casserole

3 cups cooked rice, 1 onion, half of a small velveeta, 1 can cream of mushroom soup, garlic to taste, small package of defrosted frozen chopped broccoli, chopped mushrooms, butter, cheddar cheese and crispy fried onions as topping.

Cook rice and set aside. Dice onion small and saute with garlic in butter.
once onions are translucent, add chopped mushrooms, saute until browned
add chopped broccoli and cook about 5-10 mins to allow broccoli to soften
Add can of cream of mushroom soup (could substitute & use cream of broccoli or cream of chicken, if you have those on hand) Campbells makes Cream of Roasted garlic that is REAL good, get that if your store has it

dice half the velveeta block and add to mixture
Add cooked rice to veggie & rice mixture, add salt & pepper to taste
If mixture is REAL thick, you can add a little chicken stock to thin it out, I had to do that
Pour into baking dish, sprinkle with cheddar cheese and bake at 350 for about 20 or until cheese is bubbly. I sprinkled those french fried onions to the top for about the last 10 mins of cooking.
**I made this for Thanksgiving and prepared it the night before, refrigerated and the next day added the cheese and baked. Was so easy and delish**
