Tilapia & sauteed spinach with tomato


Cast of characters: red wine vinegar, lemon, garlic, crushed red pepper flakes

baby spinach

sliced cherry tomato

heat saute pan, add spinach and several dashes of red wine vinegar
as the spinach starts to wilt, add in garlic, s&p, crushed red pepper flakes & tomato and cook until your desired consistency. I don't like my spinach super wilted, so I just cooked for a min or so. Squeeze lemon juice once it's finished cooking. Tilapia cast of characters: fish fillet, flour, non-stick cooking spray, lemon you only need a few tablespoons of flour, this kinda looks like a lot, but that is a smaller saucer, not a dinner plate. Season flour with garlic powder, s&p
lightly flour each side of the tilapia

coat a saute pan with a generous of non-stick cooking spray of your choice
add fish to hot pan. again, this looks humongous, but it's just the picture! It also looks like it's swimming in grease, but it's not greasy at all! Cook on each side about 3 mins.
Once fish is browned, I squeezed the other have of the lemon onto the fish and served with spinach and tomatoes. Yummy & super healthy dinner!
(I had some leftover sauteed onions from the night before so I added to the top of the fish)
